Café Au Lait was hybridized by Bruidegom in the Netherlands and was officially introduced in 1968.

Color: Pink (PK) / Light Blend (LB). The name means "coffee with milk," reflecting its unusual, sought-after shades of creamy blush, pale peach, beige, and champagne. The color is highly variable and often shifts throughout the season.

Form: Informal Decorative (ID) / Dinnerplate. Classified by the ADS as Informal Decorative (ID). It is widely regarded as a Dinnerplate Dahlia due to its impressive size.

Bloom Size: Large to Giant (B to A). Typically measures 8 to 10 inches (20–25 cm) in diameter.

Height: Medium-Tall. Grows to approximately 3 to 4 feet (0.9–1.2 meters) tall.

Performance: Coveted Wedding Flower. While not the most prolific or early bloomer, its massive, soft, and fluffy blooms make it a staple for high-end wedding and event arrangements. It is a slow grower and may require staking to support the heavy blooms.
